If you remember from my last article, I admitted my lack of knowledge of the Avocado.  So, I have done some research and tasting.  I have discovered another wonderful, healthy recipe ingredient for our family.  It has definitely been my lost for not giving this wonderful fruit more of a chance earlier on.  But in my defense it is a fact that taste buds do change as we mature.  How do I know this, because when I was 15 years old I surely did not eat pea soup?  Today Pea Soup is one of my favorites.   Anyway, back to Avocado’s.  Now that I know it is a really healthy choice that is so versatile, it will be a regular in my diet.  Here are a couple of my favorite quick and easy Avocado recipes.

Avocado and Tortellini Soup

Ingredients:
½
  large onion, minced
3 green onion sliced thin
4 cloves roasted garlic
1 tablespoon olive oil
1 can (14-1/2 ounces) diced tomatoes in juice
1 quart chicken broth
¾ teaspoon dried basil
salt & red pepper flakes to taste
1 package (9 ounces) refrigerated cheese tortellini
2 ripe Avocados, peeled, seeded and cubed
Shredded Parmesan cheese, optional

Instructions:
In a large skillet sauté onion and garlic in oil 1-2 minutes or until onion is transparent.  Place sautéed onion and garlic mixture with tomatoes in juice in a blender and blend for 30-40 seconds.  In a stockpot combine puree mixture, chicken broth and seasonings.  Bring to a boil.  Add tortellini; return to a boil.  Cook for 7-9 minutes or until tender, stirring occasionally.  Ladle hot soup in serving bowl, garnish with avocado and cheese.

Serves 4
Prep Time 20 minutes

Italian Kabobs

Ingredients:
8 (12-in.) wooden skewers _soaked in water
1 lb. (1 in. cubed) marinated skinless, boneless chicken breast – grilled and chilled
3 firm-ripe Avocados, halved, seeded and peeled-cut each half into 12 chunks
16 grape or cherry tomatoes
1 (8 ounce package Extra Sharp cheddar cheese) cut in 1 in. cubes
16 – 20 Greek or Kalamata olives
1 red bell pepper cubed, 1-in. pieces
1 yellow bell pepper cubed , 1in. pieces
Your favorite Italian dressing
Fresh Italian herbs, chopped, optional

Instructions:
Thread each skewer with each ingredient, place skewers on a serving tray and mist lightly with your favorite Italian dressing, sprinkle with fresh Italian herbs and serve 1 kabob on a bed of red leaf lettece.
