Whole Grain French Toast

Try this new healthier twist for French Toast, taken from my cookbook where you will find over 300 recipes on the Lite-Side..

  • 2 small, very ripe bananas
  • 1 cup Almond/Coconut milk
  • ½ t vanilla
  • Dash cinnamon and/or nutmeg
  • 8 slices whole grain bread, toasted
  • Nonstick cooking spray as needed

Process bananas, milk, vanilla and spice in a blender or food processor until very smooth. Pour into a shallow bowl. Heat a nonstick griddle over medium high heat. Apply a light coating of nonstick cooking spray. Dip bread into banana batter and cook until lightly browned on both sides. Makes 4 servings.

Tip: the trick to this recipe is toasting the bread before its dipped in the French Toast batter.
