Fruit And Veggie Soup

2 tsp extra virgin olive oil
1 cup celery, finely chopped
1 cup onion, finely chopped
1 tbsp ground curry powder
1 cup diced carrots
1 cups zucchini, washed, sliced lengthwise, seeds removed, and diced
1 sweet potatoe, peeled, diced
1 cup Bartlett pear, cored, and coarse chopped
1 Granny Smith apple cored, and coarse chopped
4 cups chicken broth
1/3 cup fresh parsley chopped

In large soup pot heat oil over medium heat until hot.  Add onion and celery to the pot and cook until soften and transparent.

Add the onion to the pot and continue to cook until both the celery and onion have become transparent.  Add the curry powder and stir to combine.

Add the vegetables, fruit, and parsley, stir to combine, add broth.

Bring the soup to a boil, turn heat to low, simmer for 15 to 20 minutes.
