Italian Salad Recipe

salad photoWe are still in the National Fruit and Veggie Month and I have a confession to make about washing fruits and vegetables before consumption.  Yes, I’m stubborn about not always washing the beautiful shinny apple before crunching it down.

If you noticed the question is, “Do you really have to wash your fruits and vegetables”?  Some scientist say that the amounts of pesticides on fruits and veggies is very low and there is no evidence that eating these small amounts of pesticides increases the risk of cancer. Yet the FDA continues to reinforce the fact that we need to wash our fruits and veggies. You must have seen the posters that clearly state “WASH FRUITS AND VEGETABLES BEFORE EATING.”

So, because I love my fruits and veggies and eat them almost daily, it’s time to admit I’m wrong and start washing them all the time.  Let me please be an encouragement to you and follow the FDA point of view verses mine, and “WASH FRUITS AND VEGETABLES BEFORE EATING.”

With all that said, here is one of my favorite salad recipes.  I hope you enjoy it as much as I do and yes, I washed all the veggies.

Italian Salad Recipe

Salad Ingredients:

  • 1 – large head of Italian mix lettuce chopped
  • 2 – tomatoes cut in bite size pieces
  • 1 – 1 cucumber peeled and seeded; sliced in approx. ¼ in. slices
  • 2 – large portabella mushrooms sliced
  • 1 – 15 oz. can of medium black olives drained
  • ½ Red Onion sliced thin
  • 4 slices – crisp cooked turkey bacon, drained on paper towel and crumbled
  • 2 – stalks of celery diced

Dressing:

  • 1-cup olive oil
  • ¼ – cup red wine vinegar
  • 2 – tablespoons water
  • 1 – tablespoon dried oregano
  • ¼ – teaspoon salt
  • ¼ – teaspoon black pepper
  • ¼ – teaspoon crushed red pepper
  • 1 clove fresh garlic – fine diced
  • ¼ – teaspoon dried basil

All ingredients should be cold. Mix all salad ingredients in large salad bowl. Combine all dressing ingredients in sealed container; shake well. Pour dressing over salad, gently toss and serve immediately. Makes 6-8 servings, depending on size of lettuce
