Heat of the Summer Recipe Ideas

Salad2Now that we are in the heat of the summer it’s best to utilize the outside BBQ grill and the Slow Cooker in the kitchen to cut down on the heat from using the oven. There are hundreds of delicious summer recipes we can take advantage of.  With all the local farmer markets at our disposal, we can enjoy the wonderful taste of fresh grown herbs, fruits and vegetables.  Some of my favorite summer meals are quick and easy without much hassle.   For instance, a fresh (beefsteak) tomato sandwich or fresh tomato salad with a bit of sliced red onion, extra virgin olive oil, fresh basil, fresh crushed garlic, salt & pepper to taste and a sprinkle of feta cheese.   The list could go on and on forever, with a little planning you can cut down on preparation and cooking time for the majority of your summer meals and have more free time to enjoy.

For example one of our family’s favorite ingredients is grilled (marinated) chicken breast. Having that one item available and ready to use, opens up a variety of recipes that are quick and easy to prepare. Some of the recipes could be chicken, broccoli and cheese omelet. Or marinated Chicken sandwich with peppers and onions. Spinach/Strawberry Salad with Marinated Chicken topped with a homemade vinaigrette dressing. A grilled pizza with a basil pesto, marinated chicken, broccoli florets, fresh crushed garlic and mozzarella cheese or a Chicken/Bacon/Ranch Quesadilla.

You see it really can be a simple process using your imagination. Another simple meal idea is all the different fresh salads that can be made in hurry. With all the different “greens” in season it is so easy to put together a healthy, tasty salad. As you probably already know I like to keep things simple, so when summer time comes along then so does potato and macaroni salad, toss salad, baked beans, chicken BBQ, watermelon, corn on the cob, strawberries, rhubarb, roasted hot dogs over the campfire, chicken kabobs, and the list goes on.
