Let’s Wrap It Up

Family picnic & more 043I can’t imagine not having flour tortillas (wraps) in my kitchen. Not only is it quick and easy to create a yummy meal using wraps, it is always challenging and rewarding at the same time. Because there are so many flavors and sizes, your imagination can run wild with creating different recipes. You can use the smaller size wraps for lighter meals, desserts, appetizers or even Hors d’oeuvres. On the other hand, you can use the larger wraps for a more hearty meal.

Just think, “No recipe needed” you now have a great way to use up leftovers and make up the recipe to your heart’s desire. If you or someone your feeding isn’t crazy about leftovers, then that’s fine too. You now can start from scratch and use fresh ingredients to WOW your family/guest with your new creations. Remember it can be a hot day with a cold wrap or a cold day with a hot wrap and both will be much appreciated.
Also, the wrap doesn’t just have to be one wrap; you can use two wraps for Quesadillas or other sandwich type recipes you would like to create. Then there is the option of cutting the Tortillas into different shapes to assemble and create your own theme type recipes for a particular person or party.

We typically always have either a whole boiled chicken or marinated grilled chicken breast (boneless and skinless) on hand and it is so helpful. We actually use it for breakfast, snacks, lunch and dinner. I’ll let you use your own ideas on how you can take one of your favorite foods and be versatile enough to use it in many different recipes/meals.

Here are a couple of my favorite wraps that I make with leftovers:

Steak Wrap

Ingredients:
3-6 oz leftover steak, sliced thin on the bias
½ green pepper, sliced thin
¼ medium Vidalia onion; sliced thin
½ cup shredded sharp cheddar cheese
3 Tablespoons of your favorite steak sauce
salt, black pepper and granulated garlic to taste
2 large wraps (Tortilla)
Instructions:
In a medium non-stick frying pan – Sauté steak, green pepper and onion for 3-4 minutes or until desired texture. Season with salt, pepper, and garlic to taste. Add steak sauce. Wrap it up and serve

Chicken Bacon Ranch Quesadilla

Ingredients:
2 large wraps (Tortilla)
1 cup grilled marinated (boneless/skinless) chicken breast, sliced thin
1/3 cup cooked bacon, chopped in bite size pieces
1 cup shredded sharp cheddar cheese
1/3 cup ranch dressing
Instructions:
Heat up a large non-stick frying on medium heat for 1 minute, add 1 tortilla shell and immediately sprinkle with ½ cup cheese, chicken, bacon to cover the whole tortilla shell. Top with the remainder ½ cup cheese and ranch dressing. Cover with second tortilla shell and flip quesadilla so both sides are lightly browned. Cut into 8 triangle shapes and serve with your favorite salsa.
