Fresh Tomato Sandwich

Ingredients:
1 fresh picked Beefsteak tomato (washed)
1 fresh loaf of Italian bread (unsliced)
24 tablespoons mayonnaise
salt
black pepper

Directions:
Make a sandwich by spreading 2 tablespoons of mayonnaise on two thick slices of Italian bread. Place two thick slices of tomato between the bread and season with salt and pepper to taste.

Fresh Tomato Salad

Ingredients:
1 fresh picked Beefsteak tomato (cut in bite size chunks)
½ red onion (sliced thin)
3 tablespoons crumbled feta cheese
1 tablespoon extra virgin olive oil
1 tablespoon red wine vinegar
½ tablespoon fresh picked basil (chopped)
2 cloves fresh garlic (minced)
salt & pepper to taste

Directions:
Combine tomato, onion and cheese in a medium size bowl; set aside. Wisk the remaining ingredients in a small bowl, pour over tomato, onion and cheese mix and refrigerate for at least 2 hours.
