Salad Is Not Just Green

green-salad-with-toppingsThe first thing that comes to mind when we see the words “healthy salad,” is lettuce.  Don’t get me wrong I love a fresh garden salad any day of the week. Now that we are getting into the spring season, I just would like to remind you about some of the other choices for salad other than lettuce.  It’s really fun once you start making healthier choices with your diet and it doesn’t have to be blasé and boring.  It can actually be colorful and tasty.

For instance, we could take a basic black bean and corn salad recipe and create a very eye appealing, tasty dish by adding spanish olives, chickpeas, chopped tomatoes, green onions or green bell pepper and red bell pepper and a little chopped cilantro.  Now mix in a zesty lemon or lime dressing and you have a beautiful salad that has been kicked up a notch.  That is just one example out of many.

Here are some more healthy ingredients that could come to mind the next time you think salad: Chicken, Barley, Tuna, Apple, Pineapple, Cranberry, Cabbage, Pasta, Cucumber, Tomato, Green Beans, Broccoli, Kale, Crab, Couscous, Strawberry, Orange, Quinoa, Potato, Rice, Avocado, Beets, Beans, Steak, Shrimp, Pear, Pomegranate, Mango, Celery and Asparagus. Wow! What a list and we are just getting started.  I hope I have helped you expand your salad horizons.

Here is a quick and easy recipe I would like to share with you, which happens to be one of my Mom’s favorites.

Mom’s Orange Salad 

  • 4 Mandarin oranges peeled and wedges separated.
  • 1 Kiwi fruit sliced thin
  • ¼ cup thinly sliced red onion
  • 1 T olive oil
  • 2 T balsamic vinegar
  • 1 t fresh rosemary; chopped fine
  • 1 t fresh minced parsley
  • 1 t freshly ground black pepper

Lightly toss together oranges, kiwi, and onion. Whisk together oil, vinegar, rosemary, parsley and pepper. Pour oil and vinegar dressing over orange mixture; refrigerate overnight.
