Watermelon Salad

Watermelon salad 3


2 cups seedless watermelon, cut 1in. cubes
1 cup grape tomatoes, cut in half
1 small cucumber, seeded and cut into cubes
½ small red onion, sliced into thin half-moons
½ cup small pitted black olives
½ cup crumbled feta cheese
2 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon dried oregano
salt and black pepper to taste


Mix red onion with balsamic vinegar in a small bowl; set aside to marinate at least 15 minutes. Stir olive oil, oregano, salt and pepper into mixture.  Toss watermelon, tomatoes, cucumbers, black olives and feta cheese together in a large bowl.  Pour the red onion mixture over the watermelon mixture; toss to coat.
3-4 servings
